Underground Bakery reopens after extensive renovation

Underground Baking Co is reopening for the first time since spring of 2020 with a fresh new look and feel.

After a year of extensive renovations to the historic 1922 building, the coffee shop and bakery is inviting the public to celebrate the occasion and to experience artisan breads and an expanded selection of scones, croissants and brezels first hand.

The old bakery space is now connected to the sister business that had been next door, Independent Roasters. Customers enter through the chic French doors to enjoy an all new layout and experience. Freshly roasted in house, guests can now order a top notch espresso beverage and shop a daily selection of organic breads, pastries and locally sourced provisions. The Market, slated to open mid to late August, is at 348 7th Ave E.
“All of us here at "Underground Baking Co. are incredibly grateful to have overcome the numerous challenges of the past 16 months after 11 years in business," owners Matthew Hickman and Lisa Hoffman said in a news release. "We are very excited to learn, adapt, grow and continue to serve our community in a positive and sustainable manner.”
